Born in Singapore with roots in Hong Kong, Chef Chris Fong is deeply passionate about East Asian culture.

Having spent his childhood across Malaysia, Singapore, and Hong Kong, he grew up surrounded by diverse culinary influences. This multicultural upbringing shaped his vision to break boundaries and connect cultures through the universal language of food.

Inspired by the artisanal spirit and craftsmanship of the Vietnamese people, Fong chose to leave his “fingerprint” in Southern Vietnam – in Saigon – where his creativity and soul continue to be nurtured by this beautiful country With over a decade of fine dining experience and six years in regional hospitality and brand consultancy, Fong has honed his craft in some of the most acclaimed kitchens across Singapore, Malaysia, Japan, and Hong Kong.

Today, he leads NÔM Dining – an immersive Vietnamese dining concept with a team of talented Vietnamese chefs.

By merging East Asian techniques with traditional Vietnamese cooking, he presents the diverse cultural heritage of Vietnam through carefully crafted innovative dishes that reflect and celebrates the country’s three regional culinary culture.
